Recipe of the Week – Crispy Japanese Chicken Burger

Get stuck in with your residents by trying this Japanese-style burger for our fourth Recipe of the Week!

We're celebrating all things food by sharing our fourth delicious Recipe of the Week for care home staff to try with their residents, courtesy of the Oomph! On-Demand Wellbeing & Activities Platform. 

Engaging in the process of making this delicious crispy burger recipe allows participants to experiment with ingredients, techniques, and flavours. This creativity in the kitchen can be deeply satisfying and boost one's culinary skills, providing a challenging but achievable task, enhancing their confidence and sense of accomplishment. 

Food can be a great way to promote group conversation. Here are some discussion prompts below: 

  • Have you visited Japan or the USA, the two cultures that inspired this dish? 
  • What is your favourite fast-food meal? 
  • Do you remember the most delicious burger you ever had? 
  • Do you remember the first burger you ever had? 
  • What are some unusual flavour combinations that you really love? 

 

Below are some ideas for adapting your delivery: 

Adaptations for those who are visually impaired 

  • Be aware of the person’s visual field. Ensure items are positioned where the person can see them.   

Adaptations for those that may have a hearing impairment 

  • Before the activity session starts, encourage the person to position themselves in the group that best supports them and their communication. For example – at the front to be able to always see you. 

Adaptions for those living with dementia 

  • If using equipment, you may need to demonstrate how to use this first (use appropriate and safe equipment for the group – risk assessment needed) 

 

You will need: 

  • Cooking aprons 
  • A large mixing bowl 
  • A frying pan 
  • Access to a cooker with a stove 
  • A bowl (for measuring ingredients) 
  • Knife 
  • Fork 
  • Teaspoon 
  • Mixing spoon 
  • Spatula 
  • Chopping board 
  • Measuring Scales 
  • Grater 

Top Tip: Before the session begins, ensure you check participants' food allergies by completing a risk assessment. 

 

Ingredients: 

  • 1 tbsp white rice wine vinegar 
  • 4 garlic cloves, gently crushed 
  • 1 tbsp soy sauce 
  • Chunk of ginger, peeled and grated 
  • 100g store bought mayonnaise 
  • 8 chicken thighs, boneless 
  • 100g cornflour 
  • Enough sunflower or olive oil for frying 
  • 2 baby gem lettuces 
  • 4 large burger buns 

Top Tip: This recipe makes 4 burgers, but you can add or subtract measurements depending on the size of the group.
